Ours is made the way it has always been made — a careful batter of besan and rice flour, spiked with chilli, hing, and fennel, hand-pressed into loose spirals, ribboned with crisp curry leaves and roasted peanuts, and fried slow in clean oil until each strand turns deep gold and shatters at the touch. There's no shortcut here, and no need for one.
