Our Spiced Tapioca Chips begin with fresh Kerala tapioca tubers, peeled and hand-sliced wafer-thin, then fried in pure coconut oil until each disc curls into a delicate, crackly crisp. Straight out of the kadai and still warm, they're tumbled in our signature spice rub — Kashmiri red chilli for colour and kick, freshly cracked black pepper for warmth, curry leaves crisped to a fragrant crumble, and a careful pinch of salt to tie it all together.
