Sun-ripened Nendran bananas are sliced thick, fried golden in pure coconut oil, then tumbled in a slow-melted glaze of dark Marayoor jaggery, freshly powdered dry ginger, and warming cardamom. The jaggery sets into a deep, glossy coat — sweet, sticky, gently spiced, and gloriously old-school. Each piece carries a chewy bite at the centre and a crisp, caramelised edge.
